Make a time table

It may sound like a no-brainer, but you would be surprised at how many moms "wing it" when it comes to the actual party. Plan it but be flexible. By all means, make a time table but plan for a few snafus. For instance if the pizza is late, have an activity waiting in the wings ready to go. Instant dance contest! Simon Says! Move another activity up. Be prepared.
Also in terms of the time table - regarding the invitations. If the party is starting at 1:00 and you have an entertainer coming, have him or her be ready to go a half an hour after the start time. Some moms start the party at 1:00 and invite the entertainer to come at 1:00 which leaves him or her waiting for half an hour for all of the guests to arrive. They should, of course, arrive early for their gig, but they should not be kept waiting for relatives to arrive past their designated start time. At least not too long. Stuff happens.

And if the entertainer is scheduled to arrive at 1:30 put on the invitations "entertainment begins at 1:15". Most moms or nannies won't want their kids to miss anything.

Something along these lines...
1:00 - Designated party start time
1:00 - 1:30 - Activity of some sort to keep the kids busy while everyone arrives (arts and crafts, puppet making, necklace making, pin the tail on the donkey)
1:30 - Entertainment!
2:30 - Food
2:45 - "Happy Birthday" cake!
3:00 - 2 hours have flown by and everyone has had a blast and it's time to leave!

Keep it simple.

It's better to have too many activities available for the kids than not enough!
